About Biberify

A Series That Lives In Memory

An exciting flavour need not always be within reach. We may remember it with the season in which we encountered it and the table we shared. We create Biberify’s limited special hot-sauce series with this relationship between flavour and time in mind.

Chosen By The Season

For special series, we seek the season’s best ingredients and give priority to geographically indicated products. The place a pepper or accompanying ingredient comes from becomes part of the series’ flavour and story.

The ingredients of that period shape which tastes we can bring together and the direction of the next flavour. An ingredient accompanying pepper changes the sauce’s relationship with food and drink. Within our general approach to flavour, we also consider the acidity deepened by lactic acid, vinegar and citric acid through its relationship with the selected ingredients.

We offer only one special series at a time. As one approaches selling out, we begin preparing the next. We want every series to have its own time.

From Biberify 3 Yıl To Biberify 101

We fermented Biberify 3 Yıl, Türkiye’s longest-fermented hot pepper sauce, for three years; its name carries that duration.

Biberify 101 followed and began the numbered sequence. We plan to continue with 102, 103 and 104. Each series is recognised through its own ingredients, while these names together trace the special series through time.

We give each special series equal weight, wanting attention to rest on its ingredients and the experience they create. While preserving the flavour characters we have achieved in Biberify Orijinal and Biberify Saf, we make room in the special series for other combinations that the season brings.

Flavour’s Life In Memory

We seek the expression of our ingredient choices at the point where sauce meets food. A familiar bite is experienced differently with a new aroma. We think of special series as companions for discovering your own pairings with different foods and drinks.

Brillat-Savarin describes the pleasure of eating as a direct sensation arising from the satisfaction of a need. The pleasure of the table also involves reflection: the places, events, things and people accompanying the meal. Care given to preparing the food, choosing the setting and bringing people together is part of this pleasure.

We can measure the time a series spends in production. Henri Bergson distinguishes duration as lived in consciousness from equal units placed side by side and counted. In a melody, impressions of earlier notes enter our perception of those that follow; prolonging even one note beyond its proper length changes the character of the whole. A moment at the table may also carry traces of what came before.

A flavour encountered in a particular season also carries the meaning of that period in our lives. In keeping special series limited, we value what certain exciting experiences gain through their transience. For us, that transience has a magic of its own.

People sharing a table carry away different details of a flavour. The texture of a bite, the evening’s conversation and the time spent together become parts of a remembered taste. One person recalls a new flavour discovered in a familiar dish, another the person with whom it was shared.

A smell can also be a cue for remembering a past event. In Herz and Schooler’s study, participants first recalled a personal memory from an object’s name, then reassessed it in the presence of the object’s smell or photograph. Those recalling with smell reported stronger emotion than the image group and also tended to feel more strongly brought back to the original event. In thinking about Biberify’s special series and memory, we also value aroma’s personal place in the experience of a meal. An aroma shaped by the season’s chosen ingredients may accompany memories of the food shared, the people at the table and that period of life.

When the last bottle is finished, that experience’s time at the table ends. Its personal meaning continues in the memories of those who lived it.

To make the moment sacred, some things should live only in memory.
